•  butcher-cut beef (weight can vary depending on the farm and processing options).

• A variety of cuts to suit your preferences, typically including:
  • Steaks (ribeye, New York strip, filet mignon, etc.)
  • Roasts (chuck, rump, sirloin)
  • Ground beef ( a lean-to-fatty ratio 90/10)
  • Short ribs
  • Stew meat
  • Depending on the farm, you may also receive offal items like liver, tongue, and heart.
